You Mo Tou (油馍头, Small Fried Dough), also known as Ma Tang, You Ma, Mian Tuo, or Lao Gua Tou, is a distinctive snack originating from Henan Province, China. Similar to youtiao (Chinese fried dough), but with its own unique characteristics, You Mo Tou is a deep-fried product made from leavened dough. It is widely popular in northern China, where it is commonly enjoyed for breakfast alongside soy milk, plain soup noodles, meatballs, or spicy soup.

Preparation Process:

  1. Ingredients Preparation: Gather flour, a small amount of baking soda, a pinch of salt, water, and one egg.
  2. Kneading the Dough: Start by pouring warm water into a bowl and adding baking soda and iodized salt, dissolving them in water. Then, add the flour and knead vigorously until well mixed. Cover the bowl and let the dough rest for 30 minutes to ferment.
  3. Shaping the Dough: Lift the dough with your hands and forcefully slap it down four or five times. Allow it to continue resting until the dough becomes smooth and glossy.
  4. Frying Process: Heat oil in a pan. Place the dough on a floured surface to prevent sticking. Cut the dough into long strips and then chop them into small pieces. Stack two pieces together and lightly press them. Place them gently into the hot oil. Fry until one side turns golden brown, then flip and fry the other side until both sides are evenly cooked.

You Mo Tou is cherished by the people of Henan as a beloved breakfast item for its crispy exterior and tender interior. Its simple yet flavorful nature makes it a delightful addition to any morning meal, reflecting the rich culinary diversity found in Chinese cuisine.
