Wuzhou Paper-Wrapped Chicken (梧州纸包鸡) is a traditional dish with a rich history and distinctive cooking techniques. Its origins date back to the Xianfeng era of the Qing Dynasty, over 160 years ago. By 1916, during the early Republic of China, the Cantonese restaurant Yu Xi Lou in Wuzhou elevated the dish to fame. Under the expertise of renowned Cantonese chef Guan Liang, paper-wrapped chicken became the signature item, propelling the restaurant to prominence and earning it acclaim across China and abroad. In 2012, Lin Yanguang, a guardian of intangible cultural heritage, established the New Yu Xi Lou, preserving the original cooking methods. In 2016, “Paper-Wrapped Chicken Cooking Technique” was recognized as part of Guangxi’s Intangible Cultural Heritage.
Key Ingredients and Seasonings
Main Ingredient: Wuzhou Paper-Wrapped Chicken uses high-quality, free-range Sanhuang chicken from local farms. This variety is known for its tender texture and rich flavor, making it an ideal choice for the dish.
Seasonings: The chicken is marinated with over ten natural ingredients, including soy sauce, ginger juice, star anise, fennel, dried tangerine peel, tsaoko (black cardamom), red rice yeast, five-spice powder, green onion, and a splash of rice wine. This combination infuses the chicken with a unique depth of flavor.
Cooking Technique and Features
Unique Cooking Method: A hallmark of Wuzhou Paper-Wrapped Chicken is the “paper-wrapped frying” technique. The marinated chicken is wrapped in Yuko paper, a special eco-friendly material made from bamboo shoots. This paper is hygienic, non-toxic, and does not shed fibers, ensuring the chicken remains clean and flavorful during cooking. The wrapped chicken is then deep-fried in hot oil.
Preserving Original Flavor: The paper-wrapped frying method locks in the chicken’s natural juices and the flavors of the marinade. This technique keeps the chicken tender and moist while imparting a golden hue and aromatic fragrance.
Fusion of Flavors: The subtle fragrance of the Yuko paper melds with the rich, savory taste of the chicken, creating a harmonious and unforgettable flavor profile. The chicken achieves a perfect balance of being rich but not greasy, with a smooth, succulent texture.
