Production Process:

  3. Coagulating and Shaping: Coagulants such as gypsum are added to the soybean milk to form tofu curds, which are then pressed and cut into blocks.
  4. Fermentation: The tofu blocks are placed in specially prepared brine for fermentation. The brine’s recipe is crucial and often includes amaranth stalk juice, black sesame, cinnamon, star anise, and other spices and seasonings. Fermentation time varies with the season and temperature, typically taking several days to weeks.
  5. Frying: The fermented tofu blocks are drained and deep-fried until golden and crispy.
