Typically, trotters from ecologically raised pigs that are grain-fed for a year are used. Each trotter is carefully selected to ensure top-notch quality.
  2. Cleaning: The trotters undergo thorough cleaning in flowing water to remove surface impurities and are then soaked for an extended period to eliminate any residual blood, resulting in a tender and clean appearance.
