Cold noodles (冷面) originated during the Goryeo Dynasty in Korea and were later brought into China by the migrating Korean ethnic group. In Jixi, the history of cold noodles can be traced back to the first year of the Xuantong period in the Qing Dynasty (1909). According to the Lishu County Chronicle, as the population in Lishu Town increased, it led to the formation of natural villages, and cold noodles were introduced. In the 1920s, the first generation of inheritors, the Jiangzhuang family, brought the Korean cold noodle and spicy vegetable preparation technique to Jixi, creating the now-famous Jixi Korean cold noodles. After generations of inheritance and innovation, Jixi cold noodles have developed their own distinct flavor and style.

Ingredients and Preparation

The main ingredients for Jixi cold noodles include buckwheat noodles or wheat noodles (though corn flour, sorghum flour, or elm bark flour may also be used), sliced beef, chili, kimchi, soy sauce, vinegar, sesame oil, and others. The noodles are boiled and then cooled, giving them a chewy and firm texture. The cold noodle broth is the soul of Jixi cold noodles, typically made by mixing light soy sauce, white sugar, white vinegar, pear juice (or Sprite), salt, and ice-cold mineral water. The balance of sweet, sour, salty, and spicy flavors is perfectly adjusted to suit local tastes. The toppings are diverse and may include shredded cucumber, tomato, apple, and pear, as well as beef slices and spicy kimchi. Garnishes include toasted sesame seeds and chili oil.

Jixi cold noodles are primarily known for their savory and sour taste, which differs from the sweeter and tangier flavors of traditional Korean cold noodles. The balance of salty and sour in the broth is moderate, offering a refreshing taste that is not greasy.
