  1. Selection: Choose plump and starchy potatoes with a low moisture content. These qualities ensure the potatoes can be easily pounded into a fine, smooth texture.
  2. Cleaning: Thoroughly wash the selected potatoes to remove any dirt and sand, ensuring that the ingredients are hygienic.
  3. Cooking: Place the cleaned potatoes in a pot and boil them on high heat until they are about 70% cooked. Then, reduce the heat and simmer until the potatoes are soft and tender throughout.
  4. Peeling: While the potatoes are still hot, carefully peel off their skins. This step requires caution to avoid burns.
  5. Pounding: Transfer the peeled potatoes to a wooden trough (known as a “jiang wo”) and use a wooden mallet to pound them repeatedly until they reach a smooth, sticky consistency similar to rice cakes. This process is labor-intensive and takes time, making it a crucial part of crafting the perfect Yangyu Jiao Tuan.
  6. Seasoning: Once the potato mixture is ready, serve it in a bowl and season it to taste. Common condiments include chives, pickles, spicy oil, and brine, allowing each individual to customize their dish according to personal preference.
