Although the exact historical timeline is hard to pinpoint, the cake has long been a beloved part of Wenzhou’s culinary culture. Its name, which translates to “Lantern Cake,” derives from its resemblance to ancient oil lamps, symbolizing light and hope and reflecting the local people’s aspirations for a better life.

Making Process:

  1. Preparation:
    • Ingredients: Mix rice flour (or soybean flour) with water to create a batter for the outer layer. Mince pork (or use shredded radish as an alternative filling) and season it for the filling. Beat eggs for later use.
  2. Creating the Outer Layer:
    • Pour a portion of the batter into a special iron spoon (shaped like a lantern), filling about one-third of the spoon.
  3. Adding Filling:
    • Place a layer of the prepared pork filling (or shredded radish) on top of the batter, then cover with more batter.
  4. Frying:
    • Heat oil in a pan and carefully lower the spoon into the hot oil over medium heat. Fry until the outer layer sets, then gently pry the cake from the spoon with chopsticks and continue frying until golden brown and crispy.
  5. Serving:
    • Remove the fried Lantern Cakes from the oil and drain. They are ready to be enjoyed.
