  • Cooking Process:
    1. Selection and Preparation: Choose fresh croaker fish, remove scales and intestines, and clean thoroughly. Scrape off the blood and fishy parts from the belly. Fillet the fish along the spine, remove the belly bones, pick out the fish bones, and cut the flesh into thin strips.
    2. Making Fish Paste: Scrape the fish strips into a paste using a knife and place it in a bowl. Add minced ginger and scallions, salt, sugar, and MSG. Let it marinate briefly, then knead until sticky.
    3. Mixing with Starch: Add an appropriate amount of white starch (or sweet potato starch, potato starch) to the fish paste. Knead until no powder is visible. Continue kneading until the fish paste is elastic and sticky.
    4. Shaping and Cooking: Place the kneaded fish paste on a plate. Use chopsticks or fingers to shape the paste into strips and drop them into boiling water. Once the fish balls float, they are fully cooked. Remove and place them in a soup bowl.
    5. Seasoning and Serving: Add rice vinegar, chopped scallions, and pepper powder to the soup bowl for seasoning. Pour the original broth with added salt and MSG over the fish balls, and serve.
